Further refine README.source.md and gbp.conf after review
In quest of the absolutely most optimal workflow, further refine the
README. Also organize the sections in gbp.conf to be more logical, and drop
options that are not strictly necessary. Additionally fix upstream
git tag format that had extra `release` erroneously copied from Galera
package.

Update patch metadata after review of DEP-3
After reviewing in detail the instructions and examples at
https://dep-team.pages.debian.net/deps/dep3/, and also after looking at
the output at https://udd.debian.org/patches.cgi?src=entr&version=5.6-1,
update the patch metadata headers to be as optimal as possible.
Also convert to using `gbp pq` for this package.
